It sounds great, I have wanted to go try a place like this ! I can really do some damage at the dinner table! 
for the same style and taste get giant broad skewers and a open fire pit with a hunk of meat and just use pepper and ROCK salt and let it roast for a while fat side up.
Also use hard woods for the fire like hickory or etc but dont use soft woods like pine they leave a acrid taste with their smoke.
On last thing use a sizable cunk of meat and when the outside is done cut it of and let the inside undercooked parts go back on the fire.
