there looking like gold dempseys with the markings of the regaler dempseys

Actually they have the markings of a blue jack dempsey, blues have the same solid lines like these that aren't mottled.

Both of my Jack Dempsys mimicked other fish in the tank. One became dark like my convict cichlids and the other became light like my texas cichlids.

Yeah they can change coloration quite a bit.
