Im not sure what kind of sturgeon it is but it taste ok. Not too bad. I also had paddlefish too. As for the price im not sure. I did not fork over the bill
Paddlefish aren't that exotic a food. It's just that in the USA, when they're food, you call them spoonbill. I've had it before, pretty darn good.
Also, if this was in Japan, they probably WERE hagfish. Those are a delicacy there. They are also used to make a type of leather, erroneously called "eelskin".
