My Culinary buddies and I are sitting around and one of them are wondering why fish have pinbones. Does anyone know the answer to this? What's the purpose or function of pinbones?

to make them harder to portion into 10 ounces............... Just kidding I would be interested to know as well considering I butcher about 60 pounds of salmon 30 pound of mahi and 15 pounds of red snapper on a weekly basis.

Pinbones serve to anchor muscle groups for more effective utilization of force

I thought it had to do with their muscle tissue, but how come some fish have pinbones and some don't?

That I do not know

Also has to do with water pressure....fish have more force on their bodies constantly than most other animals....so they have to disperse the pressure evenly throughout their body. Also has to do wit the musclature like gup. said.
