Planted Blackwater tank?

Hey guys, I'm kinda new to planted tanks but have always had live plants around. I wanted to set up a planted blackwater tank. The questions that I have are, 1 - will it work? 2 -heard it changes the PH and is planning on a 55 gallon tank so will I be able to keep and maintain big fishes in there? 3 - for you experts, whats has been the best way to tan your water? I heard drift wood, peat moss and almond leaves work well. I want the tank to be as tan as the tank in the posted video below. Thank you for your time.

Malaysian driftwood definatley does the justice for tanned leeched natural looking appearance.

Here's my tank with just 2 large pieces in the tank. Just recently bought a regular good size piece for my 55 gallon and will be re-doing the scaping of my tank.

I also have a tan/orange plastic light shroud on my T5 high output light that reduces the look of the bulbs and gives the water a more "blackwater" look. I wish I had a good enough camera to capture the look of my tank to show you, but I'm sure you get the idea...
