Please identify my fish

It's funny that this species are rarely kept in aquariums, yet they are very common food fish in their native range....
 
I have never seen one offered for sale. I would have gladly paid 50 bucks to grow it out.
 
I don't think I came across a keeper yet. MN_Rebel's statement rings quite true and agreeable.

What does it mean "to keep it as a grow out"?

Saw this post on ab a few days ago and almost jumped at it. He's a cool looking fish. Would look great in my collection...

Not sure what it means. They're all growing are they not? Unless of course they've reached max size...
