dont boil the veggies, not even to blanch. you can wash them to make sure nothing else is on them, but boiling is just getting rid of all the nutrients that your pleco wants. You dont cook meat for your fish and they can eat the veggies raw too 
My G. joselimaianus really enjoys courgette... leaves the outside of the disks i cut, makes a nice little ring. The lettuce would be gone if it was a pleco eating it! lol. I've never had that much success with mine eating any form of lettuce. Seems to like bloodworms and prawns too though.
