Has anyone ever tried to use thin plexi to seal a ply tank? Another material that come to mind is some stuff called coraplast (or something like that), it's basically a plastic cardboard. I've had some signs made out of it and it seems pretty water proof. I'm just thinking that a solid sheet of something would be more reliable than painting stuff on the plywood.

I have used fermica. It worked good while I had it. I had to get ride of it after a few months, so don't know how it would have done long term.

The problem with extruded plastic products is that they shatter or split under pressure. Thin cell cast acrylic might work, but why line a plywood tank with something clear when you could build an entire tank out of it?

There are better solutions for sealing a tank. Either build an acrylic tank or seal the plywood appropriately with something like Pond Shield if you want epoxy or Pond Coat/Rubber Coat if you want a product with elasticity.
