Most young fish are drab to help with camouflage and give them a better chance to survive.

Once they grow and get to sexual maturity they are usually big enough to fend for themselves and need those stunning colors to razzle and bedazzle the guys and gals.

I'm having issues with my polleni. He/she is a super picking eater!!. Any advice on what to feed them?

To be honest your fish looks quite fat. So maybe he or she (more female impression) is picky because there is more than enough to choose.

I would try to get it on a good quality carnivore pellet and give it some fresh/frozen prawn or fish from time to time. Maybe once a week or so. Since it is mostly carnivore in nature and hunting is often unsuccsessful one or two days a week without food will be beneficial for long-term health.
