I call these Sh*t Biscuits - for a pic, see the entry in the MFK baking contest that looks like a crap patty... Recipe I came up with myself, it's also vegan!
2 overripe bananas
2 cups old fashioned oatmeal
1/2 cup chopped almonds
2 tablespoons olive oil
pinch of salt
one apple, peeled and diced
cocoa powder to taste, I go with ~4 heaping tablespoons
3/4 cup water
1) Mash bananas with cocoa powder, salt, olive oil, and chopped almonds. Mix in oatmeal, about a half cup at a time. Stop when you've mixed in half the oatmeal.
2) Put diced apples in bowl with water. Cover with saran wrap and microwave for 5 minutes or until cooked.
3) Mix apples and water into bowl of oatmeal. Mix in remaining oatmeal.
4) Plop down on cookie sheet. Spread them out a bit as the batter is not as viscous as other cookie batters.
5) Bake 20-30 minutes on 275 degrees. Alter baking time to your liking. Goal is to get a chewy biscuit that isn't mushy in the middle.
With nut allergies, obviously omit the almonds, but I've made them both ways and the oil that comes out of the almonds during baking definitely mesh better with the cocoa.
