For me hands down its got to be Tog. A few others I think deserved to be mentioned are deep water flounder and triggerfish

Bluefin tuna. Caught some recently off the south Australian coast and they can fight full bore for well over an hour and feel like they can pull your arms from your sockets!

a monster northern pike can be quite tough to haul in the boat.... pound for pound though the south american dorado I've heard is ridiculous to try and pull in.
