Preserving piranha skeleton?

A while back, I ordered a manueli from a vendor that died during shipping. I kept the fish frozen in a ziploc bag with the intention of stripping it down to the skeleton to keep the head/jaw for display. I've tried looking online for the best/easiest method to do this, and most say to use beetles or leave it out for ants to remove the flesh.

I'd much rather do this without using bugs or mother nature - would boiling the fish to get the meat off work? Will that somehow damage any of the underlying skeleton? In a perfect world I'd like to preserve the whole skeleton, but the head and jaw is most important to me. The rest seems like a ton of work to keep together and I don't know whether I have the skill to pull that off.
