putting sand in 100 gal and what steps should i take from beginning to end

Black sand is fine and depending on the colors on your fish, the black sand can make it look amazing. When I add sand to an established tank I use a long piece of PVC pipe and a funnel. I attach the funnel to one end put the other end at the bottom and just dump the sand in through the funnel after I rinse it. It reduces the cloudiness in the tank and the fish don't freak out as bad.

I put 50lbs of PF sand in this 120 gal a few days ago using a coffee mug.

next day, I have a sponge filter on the pump

I would leave a little of your old gravel underneath the new sand, it will help provide seed for new beneficial bacteria to grow faster.
Although I went without old gravel, I transferred rocks, wood, and plants from other tanks.

I just switched over to sand myself it looks beautiful. I used pool filter sand I used about 75lbs in a 90 gal. I rinsed off the first bag I used but I really didn't need to I just dumped half of the second bag and it was fine no clouding at all. I paid 15 bucks a bag

I used pool filter sand. It was in a fresh tank though so I put it down first and slowly filled with water. I also let the canister filter run with one of the trays packed with a good amount of filter floss for about an hour. Removed the clogged up filter floss and was ready to go!
