I called the company they said 'yes it's safe for potable water' and that you can plumb your taps in your kitchen, bathroom, etc with it.

The tank im building overflows for is 18" high, the bottom of my overflows are 2 inches away from the bottom of the tank, 1 inch from the gravel. Will this be acceptable?

Btw, did you check the sticky thread to make sure the pipe sizes are large enough?

I have the same pump and it covers more distance. So you are good and I have nice flow.

Oh yeah, I forgot that you have a hard time finding smaller stuff. 1.5" for the overflows is fine too. It will just look somewhat bulky in the tank.
