Rapid Breathing

The water isn't too warm at 79 or 26. Fish do normally breath faster than we do but without seeing what you're talking about it is diffacult to guess at what if anything is wrong. What you can do is a 50% water change clean water is like chiken soup for fish, make sure you have some surface agatation so there is a good exchange of 02 at the surface. You could add some aquarium salt you don't need much 1 tsp per 5 gallons of water, salt helps resperation and allows the fish to breath easier. This will help and if nothing is wrong it wouln't hurt.

Do the gills look redder than normal, inflamed?

From time to time this happens to me and the water testing comes out normal. Sometimes I just do a large waterchange 50-75% and it seems to restabilize the tank. I can't tell you why but that is what I do.

I do the same with cold water. I do not know why, butmi empirically tiemthis a lot with warm water, which theop's is not, as a matter of fact.
