I wonder if blue crawfish are as delicious as the regular variety...

Redclaw crayfish are fabulous to eat. I cant tell you about NA crays because I only keep and work with ones from the Southern Hemisphere.
Redclaw taste more like lobster than a cray and the walkamin strain can reach up to a pound and a half in weight. They are sold only in upscale stores and markets and they are sold as an upscale item for a pretty penny. Upscale resturants absolutely love them also.

I am hoping that by responding to more than one of ur posts, that I will get some ones attention and they will let me know how to order some of these larger walkamin crawfish. and a little more info on them. And out of my own curiousity where in Texas are you?
