If you want to get technical, did you know that every species of sturgeon and paddlefish are covered by CITES appendix 1 or 2? US species are occassionally available to the public provided that sufficient numbers are released to repopulate wild habitats.
The Chinese sturgeon may be undergoing culturing in the US. I still haven't found anything beyond feasibility studies but, some fish farms may have proceeded with a breeding program. Considering that a single female can lay millions of eggs per spawn, the likelihood of juvies being made available to the hobby seems plausible.
 
US species are allowed for sale from government fish farms provided the contracted numbers have been met for release to native waters. Anyone in the US can stock their ponds from these fish farms (provided you buy the minimum numbers listed by the farm). One sturgeon farm, that I know of, in the mid-west sells live sturgeon to the public but, their minimum order is around 250 individual fish.
 
I once ate (part of) a Chinese sturgeon :eek:

A buddy and I had a drinking session with a previous (and rich) neighbor. We arranged to meet him for lunch the next day and he took as to a beautiful fish farm / restaurant in the mountains. They specialized in Chinese sturgeon and trout. He selected quite a big one that was still swimming around in one of the ponds ... easily over 2'! They served six different dishes from the fish, starting with a skin salad. Three of the dishes were fried, so not to my taste, but the made sachimi from it which was good.

I didn't know at the time what it was and only found out later when I translated the name. It didn't go down that well on a hangover, but overall an interesting experience.
