They do that because they think that gar are invasive and killing all the trophy fish they want to catch. Why would you kill a fish that you think doesn't taste good? You'd just release it.

I understand that, but they also don't eat it. Even if it was an evasive killer, if it was good eating, most fisherman would eat it. No one want to eat a gar. Eating gar is not a mainstream concept.

No its not that people think they are invasive but the fact that they think they are eating all the fish they like to eat. They call them trash fish.

I believe you - I'm just saying, I was told once that gar is actually very good eating. Something about rolling the meat up and frying it.

I've always heard that gar roe is toxic, but my question is, "Why and who wants to eat gar meat?" I've never had it and have no desire to try it. I would think it's not very palatable, plus gar are considered junk fish, by most fisherman..

Ya know for quite some years... Well century's really these ideas and thoughts are what have been the typical when it comes to these fish. People have been taught and told to view Gar in this manner. "They are not good for nothing" "They eat game fish and wreck fishing" "They are the devil incarnate" "Gar are Devil fish that eat children"

Well all of these are false and you have been duped into believing nothing but old fairy tales lies and distortions. My absolute favorite quote in dealing with gars was a simple transcript ..

Fish biologist: So there used to be gars all around.
Bubba fisherman: Oh yeah they where all over They where killing things so we got rid of them.
Fish biologist: So was the fishing good back then?
Bubba fisherman: Oh yeah really good.
Fish biologist: so how is the fishing today?
Bubba fisherman: Oh it sucks now....

Huh wonder if Bubba fisherman got it yet.....Wonder if Bubba fishermans spawn will get it.

Maybe not a mainstream idea or concept because you have been trained to not think of Gar as a food fish or as a worthwhile fish. This is not the case for everyone.. It does get top dollar in many locations in the south and it is a viable fishery in many areas. Gar meat actually is a top dollar item in many areas in the south.

The only reason gar is considered a non food fish is myth and rumor passed on from generation to generation about how awful these fish supposedly are..

Gar meat is actually quite good and I eat it often myself. It is a very good light tasting fish with a firm texture. It is very much like a fishy pork in large cuts and is reminiscent of crab meat when minced. One can actually use Gator gar easily in place of Crab and I'd doubt anyone would notice.

to follow up on what richard said,

definitely agree on the taste of gar meat...i've only had it once (two species, spotted & alligator) but it was really good. had it fresh down in Louisiana. also had bowfin...i swear we've all discussed a lot of this before :)

Richard, i think bowfin caviar could be a moderately lucrative business, check out the price for a jar of it on ebay!
