I think the big nitrate explosion was just an unnerving, temporary situation.
The new gravel bed was devoid of BB. Once the BB becomes established in the new substrate, it will likely be okay to return to your original WC schedule.
My tanks are overstocked, and have 4 inches of well established beds of small grain gravel substrate. I change out 50% of the water weekly. No plants & no gravel vacs. Nitrates remain quite low.
Note: your wine must be comparable to our local "moonshine".

. On a more serious note it is good that both your tanks and your wife came out good in the end. Also there could have been a market for wine that strong, perhaps in America.
