If you listen to the Flowerhorn guys out there, they will tell you a lot of the hump size will be determined by food types. Then again Flowerhorns are hybrids; many have been selectively breed for that characteristic.
In the Red devil/Midas area I think a lot of it is genetics and the fishes maturity that play a big part in hump size.
