wow your tap water even seems soft, I'm no aro expert but I even if you dose minerals it could cause problems because of the rapid depletion of them over the course of the week. Tough spot man, I would mix up a bucket of mineral saturated water and run it as a drip to complement the RODI drip to balance out the pure water as needed. Or if you want to get fancy a reactor would work well also.
