The Cichlid Fishes: Natures Grand Experiment in Evolution, by the late George Barlow is a must for anyone interested in cichlid behavior and evolution. It deals with american and african cichlids.

And I agree that the Eartheater book and the Linke & Staeck books are great choices.

Even better sources of information are scientific articles

I agree with Ed on the George Barlow book, I also have it and beside great info, and is a very entertaining read.
