If all the parameters were good then could they have eaten some food that was less than fresh?

How old were the test kits and what did you test for.

My guess is that the nitrate had gone way off the scale..the test kits go out of date pretty quickly and they go out of accuracy before their best before...it may show as 75-100ppm but often at this range it could be over 500ppm IMO (if left unchecked over time)

test kits were brand new.
