I’m wondering what’s the biggest they get, I read they got around 8 inches but at the moment I haven’t seen any good proof. I got one a few years ago, but only seeing ones 6 inches at the biggest, I thought he’ll be fine in my tank. Right now he’s pushing 7inches+ and still growing. I’m wondering if anyone has some big fellas because in one source, it read they get up to 10 inches.

I have seen many around 10", in high water quality tanks (very low nitrate).
Although it may depend on location variant.
The term jurupari is often of a generic catch-all for any Satanoperca by LFSs, some growing a little smaller, some a little larger.
But it seems most aquariums specimens top out around 8", which may have to do with available space, and how fast water quality in that limited space is allowed to deteriorate, and nitrate to rise.
 
Agree on several of Duane's points.

Exact species or population makes a difference. Besides mistaken identity, jurapari may continue to be split into more species. An example is Satanoperca rhynchitis, which used to be called 'red lip' jurapari. Male/female also makes a difference. But I've seen plenty of 9" jurapari and some larger.
