Drop the ghost shrimp idea. Im pretty sure one of my rays could probably finish up all 200 in one go, if not, another one would finish the rest. Variety is the key. For now just get your ray eating on some worms, weather it be night crawlers or earthworms, practically the same thing. Maybe a month or two later, when its well fed, start weaning it onto other foods like market shrimp, pellets, fish fillet etc. You should be able to reach a point where you can practically feed your ray anything and it will happily eat it up. For example, I know many members, myself included, who are able to walk into a supermarket and pick up whatever is on sale knowing my rays will eat it. This saves you hell of alot of money in the long run when you try to feed rays.
 
What Gshock said, 100%. If you're planning on feeding only ghost shrimp and plan on having 200 last 2+ months, your ray will be dead from malnourishment by next week, maybe the following if you're lucky.

It wouldn't hurt to get them on pellets either. All of my rays pounce on massivore and nls pellets, even my baby ray that is only 6" is already eating sinking cichlid pellets. She was converted to pellets in less than a month and is now growing like a weed.

How do you go about converting to pellets? I have NLS pellets from my african tank. Can I just go ahead and toss a few in, or are they available in a bigger size I should be looking for (these are 1mm).

I'm going to pick up a few shrimp today, but before I drop them in I'm going to try a few different things. I'll be looking for worms (preferably earthworms to avoid chopping, but if its all they have, nightcrawlers).

Follow the link gshock suggested. Seriously, for all of my rays I just fattened 'em up for a month on whatever they would take, then starved for a day or two and then fed nothing but pellets. They started nibbling on them and the rest was history.
 
night crawlers are better worth a little mess. you can wash your hands afterwords. and dont forget to only use the scissors for worms and fish related things from that point on.
