Today with the falling leaves and beautiful weather I was inspired to make a Jewish Apple Cake. I have been making this recipe since I was 13. It was originally given to me by one of my horseback riding students and quickly became a favorite of my family then, and now. Its perfect for fall and I thought I would share it with my AC family! Feel free to share your favorite pumpkin/apple/fall recipes!


Jewish Apple Cake

Ingredients:
3 C Flour
2 1/4 C sugar
1 C oil
4 unbeaten eggs
1/2 tsp salt
7 Tbsp Orange juice
2 1/2 tsp vanilla
3 tsp baking powder
4 apples, thinly sliced

Directions:
Grease a tube pan thoroughly (its a "sticky" cake because of all the sugars from the apples)
Preheat oven to 350

Thinly slice 4 apples and toss with 2 tsp cinnamon and 1/2C sugar.

Mix remaining ingredients until a stiff batter forms.

Layer batter and apples in the greased tube pan. Take care to make thin layers of the batter so that you don't have a ton of leftover apple slices (though they are a delicious treat!).

Bake for 1 hour, 15 minutes or until done.

Cool on wire rack thoroughly before removing from pan. Use a pastry scraper or butter nice to make sure its not stuck to the sides of the pans.

I think with me living in AZ and you in PA, it would be quite a road trip. Maybe I could plan on something more, like picking up some more tanks and fish along the way, than just coming over for a some cake. BTW, thank you for the invitation.

After careful consideration and deliberate thought, I have decided to share one of my favorite seasonal recipes. I had several to choose from, so that is why, it took some consideration and thought. So without further ado, and without gilding the lilly, here is my recipe.

HARVEST SEASON PUMPKIN BREAD

INGREDIENTS
2/3 cup Spiced Apple Cider
1 cup olive oil
3 eggs
2 cups Pumpkin, pealed & precooked -or- about 1 Lrg. can of Pumpkin
3 & 1/3 cups Flour
1 & 1/2 teaspoons of salt
2 teaspoons of baking soda
2 & 1/4 cups White Granulated Sugar
1/2 cup Raisins (optional, but I include them for flavor)
1/2 cup chopped walnuts or pecans (optional) It's delicious with them.
1 tub of soft cream cheese (usually purchased in a 8 or 16 oz. tub)

DIRECTIONS
1. Preheat oven at 350*F.

2. Mix together Spiced Apple Cider, oil, eggs and the Pumpkin.

3. To the Pumpkin mixture, add the flour, salt, baking soda, sugar and your optional items of raisins and nuts if you are going to use them.

4. Grease and flour 3 Loaf Pans. (Special note: You can use cup cake pans, but the use of cup cake paper liners are adviseable.)

5. Fill the loaf pans (level, to 3/4" from the top edge of the loaf pan) and bake for 50 minutes or until a toothpick inserted into the center of the loaf, comes out clean. [For cupcakes, the baking time is reduces to about 12 to 15 minutes or until a toothpick inserted, comes out clean.]

6. Let cool 5 to 10 minutes. Then serve and with a bit of cream cheese and enjoy!
 
I can't believe there are only two recipes being shared. I know there must be more people out there who enjoy eating just as much as we do, msjinkzd. I guess their adult taste buds haven't fully developed yet. I'm sure there has to be more.
