That apple cake recipe sounds delicious. Can't post this recipe, but thought I'd post pics of my culinary endeavors (I'm no Suzie Homemaker). A week ago, I made the equivalent of 5 Heavenly Mudslide Pies for a Cooking Vegetarian Class. To be specific, they were raw food pies.....extremely labor intensive....coconut milk from young Thai coconuts, almond milk made from almonds soaked for 24 hours, etc., etc.

The pie was for us...wasn't going to go through all that work and not have any :)

The crust was made of processed almonds, coconut slices, date paste (Medjool dates run through a grinder), pinch of salt and vanilla water (made from 3 vanilla beans chopped up and processed in a cup of water), and raw cacao powder. Worked from 5:30 to 2 am (did take a 1/2 hour break and browsed MFK)

The white chocolate filling was made of coconut milk, soaked cashews, agave nectar, lecithin, cacao butter, vanilla water, salt. 2nd filling was made of white chocolate filling with raw almond butter. The dark chocolate filling was made from almond milk, agave nectar, cacao powder, cacao butter, lecithin, vanilla water, salt.

wonderful. Is any of that animal based? You mention it was vegetarian but is it vegan? My sis is vegan and I would love to make a delicious vegan dessert for hte holidays for her.
 
Recipes are up another notch from vegan--recipes are raw, organic, plant based. Everything I've tried has been scrumptious. Recipes are from the gourmet raw food restaurant Sweet Gratitude in the Bay area. It's incredible what these food artists are doing with raw ingredients. Besides pies, "cheese" cakes, they make cakes using almond flour (what's left over from the almond milk process). Sweeteners are agave nectar dates and sometimes Yacon syrup. They use a lot of coconut oil to thicken things, but that is supposed to be one saturated fat that is not bad.

doesnt have to be a holiday dessert, but i only seem to make it around the holidays.

Pinkabutter Pie (Family has been calling it that for 25+ years, no idea where the name originated)

Crust
1 bag semi sweet chocolate chips
1 stick butter
Rice Crispies (about half a box)

melt chocolate chips and butter in large microwave bowl
add rice crispies and mix till well coated in chocolate.
press into 2 pie plates and chill while preparing filling.

Filling
1 8oz cream cheese
1 can sweet condensed milk
1/3rd cup lemon juice
Vanilla
peanut butter
12 - 16oz cool whip

beat cream cheese till soft and smooth
add sweet condensed milk
add lemon juice
add vanilla (one glug from bottle)
fill empty milk can with peanut butter
add peanut butter
once well mixed fold in cool whip
fold into chilled pie crust
drizzle with chocolate syrup
keep refrigerated until time to eat
