Was the S Am Knive caught as a 12" fish or caught as a juvi then grown to 12" in an aquarium?... 12" BGKs are very hard to come by... I generally appreciate fish more when I have grown them out from very small... I don't have an answer of what you "should" do... but these are some thoughts I had on the topic...
