55g is fine for a lone Escondido. They only get 8-9 inches. You do not need to upgrade.

I'd suggest a 75g if you can....easier for it to turn around when it's grown. You might even be able to add some tank mates.

As always Lach bigger is better when it comes to fish.

A 75 or a 90 would be better and you may be able to add a fish or two as well.
