show piece fish for a 75?

Lots of options here. Chocolate is a good choice, many of the viejas will work, red devil, Texas cichlid, loiselli, Uaru, or carpintus.

If you really want a wet pet it is tough to beat a puffer, but that is definitely out of scope of what you asked. Another one that is extremely interactive, but out of your scope is an archer (clouded is best). It would be a little weird to have just one in a 75, but it would work.

Out of all of those fish my choice might be the chocolate. They are really interesting and they seem to change colors with their mood.
I think I would get to attached to puffers and i'm not about feeding it clams! I really like the chocolate cichlid and the Texas, but was not aware that I could keep a red devil in 75. Is that possible? I would get the red devil for sure if I could fit it!
 
It’s a bit of a squeeze but could work.
You may want to look into sagittae, not much on them and a little hard to come by, but significantly smaller.

There will be disagreement on this. I would say you are on the minimum size it will depend on the fish. Technically they can get to 15-16 inches, but that is a max. I think 12-14 is more common. I also think there aren't a lot of pure red devils left out there. So that is probably bringing sizes down a little.

Sagittae was a good suggestion.

oh i wasnt aware of this! thanks for the info. This is gonna sound weird but I usually love fish with big "bumps" like flowerhorns, buffalo cichlids. For whatever reason I just dont like the green terrors "bump"
