How many silver dollars can I put into a 75 or 90 gal tank?

Alone I bet at least 6 to 8. But I wouldn't do that many if you are going to put something with them.

You won't need anything that will be too extreme, but I would go with like a emporer bio wheel 400 and a aquaclear 300/70. The aquaclear 300 also goes by the name of aquaclear 70. They are both pretty cheap and great filters. GL

Fish I'd say 6-8, coins quite a few.

silver dollars are a school fish....and in a tank of that capacityu could have 5-6 depending on what other fish are in the tank

If you have 5-6 silver dollars they should be fine, but any less than that and they might nip fins on the bettas

Well... the silver dollars surely won't be harassed or in danger. The live food, er, female bettas will be in SERIOUS danger. My silver dollars LOVE female bettas... and male bettas too.
