Single specimen or pair for a 75g?

Yeah I wouldn't go with a motaguense, to agressive. If you don't want anything aggressive I think a few discus would be nice. You said your tank already has wood in it so it should look cool. Or what about a few uaru?
 
Hmm Uaru look pretty cool - how many would fit comfortably in a 75? Never seen them around here but I'm sure I can order some.

I haev a much larger planted tank that may slowly be converted over to discus... I used to keep discus quite extensively about 5 years ago, starting to pine for them again ;)

I was also thinking about a breeding pair of Nicaraguans... so many choices!
 
I would get a really nice Vieja/Paratheraps to go in it. They are really beautiful, but not insane like other CA cichlids. Fenestratus are really nice, Argentea are also beautiful (not as colorful, but really nice anyway)

Other than that, you can do just about any large cichlid that stays under 14 inches or so. For a pair, you might need to go a bit smaller, like salvini, GT, etc.

For dithers, silver dollars might work (maybe too big) I have giant danios with my GT. There aren't as many you can use in a smaller tank like that.
