Skinny peacock eel going downhill fast

I can't keep shrimp for anything in my tanks ( pretty sure its our water source) what type of shrimp where they? I would do a few big water changes opposed to stripping it down or anything, if you have fish still leave them in. and dosing on the heavy side with dechlor. btw.. i also worked for petco for a few years.. and petsmart as well.. then I learned more here in 30 days then i did working for either of those places for over 6yrs combined... lol

They were bamboo shrimp. I've only had them for about two weeks, but they were both super brightly colored, so I thought they were healthy and doing good. It was just weird they were fine yesterday morning, then both dead last night. I'm starting to wonder if they didn't starve. I went from three tetras, an eel and a betta I was feeding, to just the betta. I may not have been getting enough food in the tank for them.
I'm going to leave the tank up and running, I'll keep planting it. I'm just going to keep up with the water tests and changes, and just see where I am in a few weeks.
