Small tank with edible plants?

You can grow scallions in 1-3 inches of water. Every time we buy them at the store, we cut the bottoms (roots + piece of stem) and put them in a water glass. We maintain 5-6 plants (they get tall !) at a time, and cut their upper stems when we need them for cooking. They don't like to be submerged more than 1-2 inches.
The same can be done in an aquarium setting; just have to come up with a way to hold the plants. An old case of a HOB filter could be one way.
Scallions belong in the same family and genus as the 'Aquarium Onion Plants' they sell at pet stores (Crinum sp.).
