Trick is you have to keep them alive until you are about to clean them and cook them. Primitive fish like these and gars habe flesh that breaks down quickly when they are killed and it starts to get mushy.

It tastes pretty good actually and yes they sell em like lobsters it's the first time I've seen em there just cook em like fish and chips

Interesting. I noted that too with gars when I was doing post-mortum cause hunting. So, your comment is about an objectionable texture, not so much the taste, right?
 
thats pretty cool that you got a bowfin at an asian fish market ill go on my phone tommorow and look at the pics my laptop wont let me view them
 
The fish at the store were really active too the fish was 3.5 pounds and about 2 feet long and it cost $23 which I guess would be cheap if you decide to keep it in an aquarium
