Pistia stratiotes (water lettuce) make pretty amazingly long roots, are pretty robuts, and I find them quite nice looking. Tiger lotus are pretty nice as well, but take a while to produce long leaves on the surfcace (and might not handle temp changes as well as other plants).

Otherwise, any "bushy" plant like cabomba can be uprooted and left to float, for a thick layer of vegetation, that's how it worked best for me for a while. I am redoing the tank, moving them to a smaller one so that all will change, eventually, but the idea will remain the same.

As for feeding, it depends on the seasons, as most snakeheads are subtropical, the temperature will rise and drop over the year, the colder the water, the least you want to feed.

Right now, my aurantis are on a twice a week small feeding, and once every other day during summer. once a week works as well during winter, their metabolism is really slowed down by the cold water. :)
