The only time Ive seen my own arowana do something similar is when it was startled.
When younger it would not simply hide its head but align itself with the leaves of a large java fern oriented tail down and remain entirely motionless.
Being a grade 2 red its silvery scales would reflect the green of the leaves and would do a fair imitation of a large java frond.
Now adult it will sometimes do the same as your fish when I mow the lawn whilst leaving the back doors open. Doesnt like the noise I guess.
