Ive read countless datnoid threads on mfk in the past years, n most seem to b "how to get my dat stable". Well hope this post can help u with your problem, just read.
Ive been keeping dats for yrs, mostly IT's (indos) which seem to be the hardest to keep stable. Ive never bought a dat that was stable @ the store. doesnt mean they wont ever b stable.
So ive tried just about everthing: changing lighting, decor, everything. None of that seemed to change much. But kept trying some other methods, below are a few things u can try:

If your running a low grade filter setup, upgrade it (wet/dry setups work well). And keep up with WC's, dats are nitrate sensitive, so low nitrate levels are a must!

Spend time around your dats. they need to feel comfortable around u, or they'll sit in the corner black or pale in color. My dats would hide all day, but after spending more time around the tank, they actually come out of hiding, and follow me with they're face against the glass now.

Feeding seems to be a key factor. I used to feed them shrimp, beefheart, etc. I since switched to Hikari Massivore delight. They absoluty love it. Wont even eat frozen anymore. As soon as i shake that bag, they all come out, stripes as well, and will actually take the pellets from my hand.

Feed daily or everyother day. I used to feed them bout 2x a week. Since feeding daily, they dont hide anymore, theyre stripes r out way more now, and hav no fear of me what so ever. And between the hikari pellets, and daily feeding, thier growth rate has nearly doubled (no joke, their monsters now.

Dats behavior vary from dat to dat, they're all different. But hope some of these simple tips can help you turn your dats into the tigers they really are.
Please comment if u think im full of it lol, or want anymore ideas (got alot more). Best of luck guys

No offense but I think most of us already do this. Or should.. Haha

I think tigers are very resilient to high nitrates.
At my mums house, the water from tap was 30 nitrate.
So mytank averaged 50-60 maybe more.
My current flat , nitrate is 20 out of tap. So tank averages about 30-40 ( with lots of wc)
All my tigers are healthy ad pretty stable.

You forgot to mention TIME is a huge factor with Indos.
I like all the other points u mention

I agree with time. I had 2/5 dats stable. Now 4/5 of them are stable. Not 100 pct, but I do see it progressing

When my IT was small (around 2"-3") dither fish made a huge difference. He had been in a 30 decorated with rock caves and a lot of plastic plants but he constantly hid and was always unstable. I moved him into a 100 with the same style of rock caves and plants, and a dozen rainbowfish. The next day he was out in the open and bright as can be. He never looked back and remained stable for as long as I had him (until he was about 7").

I have nine 3" to 4" IT's in a 360 gallon tank. Most are stable all are eating the same, swimming in the same water and seeing me for the same amount of time and so on......

I just think these fish have personalities and some times they are pissed or tired or what ever and they go unstable????? Obviously the better water quality, feeding, size of the tank matters but some times they just wake up on the wrong side of the bed lol

Agreed, Time does seem to be key fosure. Some r just a lil more shy, but come around sooner or later. Start showing those nice bold stripes more often over time. I think tank aggression has alot too do with it too. Had a gar with mine for a while, they hated that bigazz needle toothed monster. I'd probably hide too lol. Once i removed him, one of the dats became the dominate for the tank, and turned from light tan to bold striped.

I kind of find it the opposite. My slowest growing dat is always stable and shy. Not an aggressive feeder either. My least stable one is the most out going and aggressive

Dionysus, I noticed that you mentioned about switching food from shrimp to massivore, was wondering how you did it with the tiger. I have a 2" IT loves the frozen worms. How do I get him to eat shrimp or other food? Any suggestion. Thanks.

when i switched to the hikari massivore, all my dats were at least 4". But once i got them on it, growth rate really picked up (as fast as dats go lol). I did hav a friend who tried to get his 2" AT on the Hik massiv pellets, but were too big to fit into the dats mouth, so he broke them up a bit, but just wouldnt take @ first. He kept trying, n just as he almost gave in (2weeks), just started accepting them.
IMO, if they get hungry enough, they'll eat them eventually. Even got my gar to take pellets, even after feeding nothing but live food to him for 6yrs.
