Ok....My question is, could someone tell me about pH and what is alkaline. Also what is "hard" alkaline and such?

A ph reading above 7 is considered alkaline. For a tanganyika tank 8.2-8.3 is ideal. Hardness refers to the amount of dissolved salts in water, there is GH, which is calcium and magnesium, and KH, which is carbonate/bicarbonate. The first thing to do is get ph,GH, and KH test kits, then you can determine what, if anything needs to be done to your water.

If you use tap water for your water changes your water is most likely going to be a higher ph

Almost all species have been tank bred for so many generations that you really don't have to worry about water hardness and PH as long as your water isn't in the extremes. Ideally yes providing the same hardness and PH is recommended but your fish will be fine if the readings are off.
