Maybe go back to the day why you got into this hobby. Have you reached your goals you set back then ? Or perhaps you got sidetracked and lost focus on why you got into this hobby/

When you added the 125, do you feel burned out with maintenance ?

I have kept fish for a long long time. I did hit a wall too as I got bored of the fish I kept then. Likewise, I started to slack off in maintaining the tank. I decided to sell everything.

But, I saw some very colorful freshwater setup --- African Cichlids. So instead of selling everything, I trade all the tetras I had for Mbuna. Doing this lit up my passion for the hobby again. So far, not getting close to getting bored.

When I first started in this hobby it was to keep jack dempseys and to watch convicts breed. I would like to see the Whole process of the cons raising the fry until they are able to be independant

I too have been bored with my tanks. Been keeping them for over 12yrs and it seemed like nothing interest me. Got in and out of the hobby. Raised fish from guppies, bred bettas, exodons, freshwater barracudas, all the way up to monster fish jardinis, silver arowanas, sting rays but it just didn't seem right. So eventually I thought I needed a break from the hobby so I sold everything. Biggest mistake of my life! Eventually I ended up buying 125 gallon and like chopsteeks said, love the colors of African cichlids so now I have a bunch of breeding Haps. and peacocks. I couldn't be happier. Hopefully you'll find that right fish to keep you in the hobby.
 
I got bored of the hobby back in 2011 and got rid of all of my cichlids and went into saltwater to focus on morays...completely rejuvenated my love of fishkeeping

I'd say the 125 is too much for you to enjoy. Most of us aspire to have massive tanks, but as previous posters said, we have to think about what made us like the hobby in the first place.

Personally I feel that its nice to be able to see the whole system of a smaller tank, than have to move about to see parts of larger tanks.

I reckon you should sell the 125 and focus on your JD, that seems to be where your passion is :)

If I was to get rid of the angelfish and gourami would I have room for an oscar?

Wouldn't a 125 Gallon tank be more appropriate for a JD? I have one, he's not even that big, and I wouldn't move him to my 75 from my 125. If he were a full 8-10 inches, he'd surely be too big for a 75?
