yep, but best for them us surface plants, any random floating plant that will cover the surface is good. In the wild they can get attacked by birds when going to the surface for air so they feel much more at home with plants at the top

You can also get some cork bark pieces and let them float about. They seem to like hanging around just below them, waiting for prey.

Yep plastic plants will be fine, just add lots and lots of little hiding places, little caves etc. As stated top cover is a bonus as it makes them feel safer. these are a beautiful Channa enjoy.
