spotted gar sick?

First of all. Please excuse my English. Its not my first language.

I bought 2 Spotted gars, around 6 inches, about 7 weeks ago. Live feeding isnt allowed here ,nor wanted, so they have been living in a bare bottom 20gallon tank so I could establish them eating before I move them to a bigger tank.
First month none of them ate anything. I tried different sort of white fish, shrimp, pellets, krill, live earthworm. One of them turned very skinny (called him Needle) with a bent back. He could swim fine tho so I wasnt sure if he had hit a wall or if it was malnutrision.
The other one was just as fuzzy bout the food, but he was in better shape in the first place.
Then after a month the biggest started to accept shrimp. 2 days later Needle started to eat as well. They have been eating very fine for 3 weeks. Needled prolly double the size (in width) and the bent back became better. They still only accepted shrimp, nothing else, but have eaten it very willingly.
Last week they both started to become paler. I didnt think too much about it until they stopped eating with 1 day between them. They also seems more skittish and they movements are more rapid and almost like spasm sometimes. Needle has also an S-shape body now and some issues swimming it seems. He swims and move all his fins, but sometimes rolls around and it almost looks painful to move.

I have done 30% water change every other day since i got them and cleaned up any debree from the bottom at the same time. The filter was well established in another tank before I put them in. I did have a major glass scrub 2 weeks ago, but i changed 80% of the water right away and then 50% the day after and then back to 30%. I was so relievd when they started to eat and gained weight, but now im actually more worried than earlier. Starvation is one thing, but im wondering of they are sick.

Any suggestion to what I should do, dont do, could do?

Possibility that your water parameters are not stable. Please list your parameters. Also do you use a water dechlorinator during water changes?
 
Feeding shrimp only isn’t the best diet due to thiaminase. If ur able to try and get it on a pellet or cut up fish. Also the tank needs to be upgraded as well.

Thank you for your reply. We dont have any issues with chlorine in the water where I live, so I dont use any dechlorinator. The water has been stable, but I will take new ones and list them tomorrow. Its rather late here in Norway. I do have 9 other aquariums from 20g to 100g (and a 300g that was ment for my gars later on) but this is my first predator fish. They might demand other type of water care obviously.

I didnt know about the thiaminase. I have been worried about the lack of variety tho, but after 1 month of starvation, I have to be honest and say I have been happy that they eat at all.
Even after they started to eat shrimp, they havent taken any other food. I thought the key was cracked once I got them to eat, but I have tried again the food listed above, but shrimp is the only thing they have shown any interest in.
I put them in the 300g when i got them, but found it impossible even establish contact for feeding in that large aquarium, so they went in what i got at the time. The plan is to establish a good feeding routine and then move them to the 100g and later on the 300g.

What are the ammonia levels, the no2 levels, and no3 levels? And what ph is the tank?

I understand the filter is from an established tank, but when was the last time it was cleaned? Also, what kind of filter?

Hide bits of fish in the shrimp, this will give them the oputunity to get a taste for the fish
 
I did some tests and here are the result so far. My NO4 test was empty tho, but I will buy a new one tomorrow.

The ammonia result was a surprise. Im suspecting my filter isnt good enough. My wife tho is certain its good enough, but my lack of plants are the reason why its higher than I would like. I usually run oversized filters compared to the aquarium size, but in this tank i was worried that it would create too much movement for the fish to hang around.

I did move the fish to another planted aquarium to see if they like it better there. Im still not sure if I should euthanise the Needle. He has a very unatural body shape and seems like struggeling swimming. Mostly hanging out in a corner or at the bottom. When I put him in the planted tank, he got caught in a plant and had a hard time getting lose. Needless to say the plants got 60% shorter within a minute.

The filter I use is an internal eheim pick up 60. Its not my 1st choice to be honest, but I was afraid a stronger one would make too much current in that small aquarium. In theory it should filter 5 times the water volume pr hour.

If the 20g proves to be too small to be able to keep the water stable after the fish started to eat and produce waste, I have an emergancy plant to move them to a 40g. I just need to move the fish in the 40g some where first...
