I am interested in purchasing a freshwater stingray, but don't know where to get one or how to go about it. What are the best type(s) to get and what do they eat? How big do they get and would they do ok in a tank with a royal knife, clown knife, and a redtail shovelnose catfish? What should I expect when/if I purchase one? What's the minimum tanks size for them?

I wouldnt keep a ray with those fish mentioned. Rays are hard to keep alone and adding tank mates just makes things more difficult for you. Of course you may be a fish keeping guru and just not had rays before so you may be fine!
I assume you have a ginormous tank because the fish you mentioned dont stay small so go with motoros for your first ray.

Your fishes are fine with a stingray.
Depending on what you can find (like mentioned, they're illegal in Arizona), stingrays range in adult size from 1' to over 3'.
