I would do a single specimen parachromis tank, like a jag or a mota.

i would be interested in doing a single or pair of large fish most likely vieja... bifa's most likely as i dont have any or maybe parachromis species...

I would do a breeding pair of parachromis such as jags or motas, or i would do a convict breeding tank with like 4-5 pairs and a bunch of fast tetras, and the aquascaping would have like 1 pice of large driftwood in the center with a few swords around it and then a bunch of rock work with a few more swords growing here and there.

Hahaha you have just described my 125 down to the little here and there sword growouts. I have one huge piece of driftwood with lots of rocks and Swords all over.
