IMO try sticking to medium sized fish that aren't known for being super aggressive [Disclaimer: Fish have different personalities and even some of the meanest fish can turn out to be pansies and some of the more passive fish can become terrors].
Some fish to look at (not all of them, but look and see if any catch your interest): Green Terror, Jack Dempsey, Salvini, Nic, Vieja Regani, Carpintis Escondido, Severums (they come in a variety of colors).

Thanks to everyone for all you helpful suggestions and advice. Here is what i am thinking about doing. Let me know if you guys think this will work out:
5 silver dollars
2 green severums
2 Salvini
1 bocourti
maybe a pictus cat or two
I realize this tank will be very full when these fish are all grown, but i can always upgrade the tank size if needed, that is not an issue.

sounds like a plan and will be awesome tank! 
(little disclaimer about the pictus though, normally they need to be kept by themselves or in a group of 3 or more, 2 will usually fight each other, i actually have two in my tank and have tried to add more on numerous occasions and they always kill the newcomers so apparently mine like it being just the two of them but this isnt the norm)
