Suggestions for a 75 gallon South American Cichlid Tank?

I would add a couple more female convicts and make it a harem. Then add some swordtails as dithers. With the swords I advise one male and like seven or so females.
The swords will pick off the cons fry at swimmer stage, and cons will return the favor and eat the swords fry. So in the end both groups coexist and don't really bother the other, to busy doing breeding activities. I have a 55 with a breeding pair of Honduran Red Points set up this way.

Alright would this work? Blood Parrot Cichlid, two female convicts, 1 rainbow shark, a shoal of Buenos Aires as dithers, and a spotted severum? Any issues with this?

Big issue in mixing South and Central is that they require different water parameters. Not only water but Central are known to be more aggressive than South so most likely would kill the southern.
 
I would do some Plecos (bristlenose, green phantom, gold nugget. the smaller ones)
OR you could do a Black ghost knife.
OR a group of Big cories like Brochis species.

You could also get a rafael cat or hoplo cat. I would maybe only do one more midwater fish, maybe an electric blue acara or two, 75g isn't alot of room once your convicts and blood parrot get bigger. I'd fill in the bottom with some fish.

I could do a black ghost knife with blood parrot, rainbow shark, and two convicts in a 75 gallon? I would love to do that if possible
