You could probably do some discus or gouramis. Either of those would be nice color. With those you can probably also get some smaller filler fish too.

bit of a waste on a 125 unless you plan on getting a ton of high quality discus and drop a couple grand on em don't ya think?
 
just because a fish can eat live foods doesnt me it has to...

i feed my fish shrimp from the grocery store and its safer (and cheaper) then most live foods...

i wouldnt limit your opinions on what it eats

Very few fish actually "require" live foods and most take to pellets/flakes/prepared diets easily. If you want to stay with Cichlids.. You can look into a few Pike cichlids, they require abit more care depending upon how secure you're feeling about your knowledge. a florida gar would also do fine in a 125. Bichir piles can be fun as well.
 
If this is a new tank why are you trying to reseal it. Call the manufacturer. The problem could be because of the glass not being cut properly. Once you start messing with it it will void any warranty.
 
BICHIRS!!! they are really easy to care for.

All your wife have to do is drop it some sinking pellets.
Although the smell might put her off.

I don't see why it would be a waste. If you get discus or gouramis, you wouldn't have to get JUST discus and gouramis. You could do a cool community with either and possibly possibly some plants too. I think that would be a great use of this tank
 
You could go with a colony of Eartheaters-- (Jurupari seem the most community safe)

Add in some clown loaches- plecos- raphael cat--

You have a lot of options with a community type tank.
