I have a 125 gallon 6 foot tank looking to upgrade my filtration. I know both would be great but if I had to pick one with money not a huge deal what would the best filtration be for peacock bass? Canister filters or a 40 gallon sump

Canister filters are more expensive.
Canister filters are more convenient to start.
Canisters typically get over run in tanks with big fish--requiring a second canister or two--or another HOB, or powerhead, or air pump.
Canisters don't require a lot of knowledge/experience.

Sumps can just handle more bio-load/mech filtration.
Sumps are cheaper.
Sumps require more planning/experience/thought.
Sumps take up more space.
Sumps get all the gadgetry out of your display tank--HUGE deal in a small tank, or a tank with destructive fish
Sumps, if done right, are MUCH easier to clean/maintain.

Even though you clearly are going the sump route.
I vote for sump as well, so much customization can be done. Also as mentioned no ugly heaters or equipment in the display tank.

Generally any tank 125g or over i will go sump everytime. So much easier to have all your media in one place than to clean 3 canisters or whatever you have at different intervals
