Super skittish, is this normal?

I use the test kit where you fill the test tubes with water and but drops in it and then compare the color to the card. I don't use the strips. I feed them goldfish once or twice perday and try to give them krill too but they usually leave it to rot so I have to fish it out. I make the mistake of feeding them steak and they loved it but the grease or whatever make the tank pretty cloudy so I stopped that. I will put a powerhead in the tank and invest in more filtration and see if that solves the problem for now.

gold fish is not good for you p's. try use fish fillet (white fishmeat so less oily or shrimp)
the cloudy was most likely from too much ammonia, did you take out the leftovers 15-30 minutes after each feeding?

I didn't know feeders were pad for them. We just like to watch them eat live food. I feed them shrimp and they eat it, they just wait until we're out of the room. I tested the ammonia and it came out fine and then I realized it was the steak and stopped feeding them that and it cleared up.

feeder fish contains very little nutrients and sometimes can carry diseases and/or parasites.
if you do want to feed them feeder fish every now and then you can get some and quarantine them, gut load them with quality food before feeding.
use fish fillets (tilapia, cat fish, etc) smelt, silverside, shrimp, etc as stable diet. red meat such as beef heart is ok as treat every now and then.
the water got cloudy after you fed beef also means the filtration couldn't keep up with the large amount of bio waste produced during/after the feeding.
they'll be more bold as they get bigger, all mine eats in front of me.

Red Bellies are just as bad as tetras, they hate it when you move towards the tank. But they'll get use to it, but stay closer to the tank when you feed them so that they associate you with feeding time. That should help a little bit.
