do you mean that they take fillets you give them, or chunks of hand fillet?

I would hold a fish fillet half in the water and they would dart up and grab it ... the rare times I was brave enough not to let go they would eat it while a held on, pretty cool

My Jag will jump up with half his body out of the water when it comes to nightcrawlers dangling above him. They're his favorite and he snatches them up with gusto. I try not to teach him jump up though because I'm afraid of him jumping out one day. It's funny though how freakin' bonkers he goes over them.
